Anti-oxidant Berry Salad

6 c. fresh spinach
1/4 c. thinly sliced scallions
1/2 pt. fresh strawberries, hulled
6 oz. goat cheese
1/2 c. sliced almonds, lightly toasted
In a large salad bowl, combine spinach, strawberries and scallions, tossing to combine. Toss in crumbled goat cheese and almonds.
3 T. quality red wine vinegar
2 T. superfine sugar
5 T. canola oil
2 T. freshly squeezed lemon Juice Salt and pepper to taste
In a small bowl whisk together vinegar, lemon juice, and sugar until the sugar has dissolved. Slowly add oil, whisking to emulsify. Season with salt and pepper to taste, add to salad and enjoy!
